Hitting the beet
Perfect Indian Fakeaway
The Vadasz is a fresh condiment
brand boasting gut-friendly
ingredients. It has launched a Super
Beet Kimchi, a naturally-fermented,
live-cultured condiment. Combining
the health benefits of beetroot
with the gut health benefits of fast
growing, on-trend kimchi, Super
Beet Kimchi can be added to salads,
buddha bowls and sandwiches.
The latest edition to the Vadasz
range of pickles and ferments
combines beetroot, red cabbage,
carrot, spring onion, apple, garlic,
ginger and red epper in a recyclable
pot. Vadasz uses a traditional
fermentation process, keeping
contents unpasteurised while
retaining their crunchiness and fresh
flavour. Vadasz Super Beet Kimchi is
live cultured, a result of the magical
process of lactic acid fermentation,
meaning it contains probiotics which
are beneficial to the gut and are not
found in many existing products that
are pasteurised using vinegar.
Dr Sarah Schenker, consultant
dietitian and nutritionist at Vadasz
says, "Fermentation helps break
down nutrients in food, making
them easier to digest than their
unfermented counterparts while
fermented foods are rich in beneficial
probiotics and have long been
associated with a range of health
benefits from better digestion to
stronger immunity. The probiotics
produced during fermentation can
help restore the balance of friendly
bacteria in the gut helping to
alleviate common digestive problems
and they have a significant impact
on your immune system, helping to
reduce your risk of winter infections
such as the common cold or help you
to recover faster when you're sick."
Vadasz Super Beet Kimchi
400g (RRP £4.50) is available from

A free e-book is teaching people
the secrets of British Indian
Restaurant (BIR) cooking so they
can enjoy an authentic 'fakeaway'
curry at home and beat the
cost-of-living crisis by cutting
their curry bills in half. British
Indian Restaurant cooking is a
unique style of Indian cooking
that evolved in line with the
British palate and the demands of
adapting traditional Indian recipes
for a restaurant setting. It has
its own techniques and recipes
- including the all-time British
favourite chicken tikka masala.
A trade secret of BIR cooking
is to batch cooking a base
gravy, which can be used as the
foundation for a wide range
of curries. The new East at
Home cookbook outlines how
to make this, and gives tep-bystep instructions
for creating
everything from lamb rogan josh
to onion bhaji to keema rice.
The cookbook was created
by Brothers Ali and Mohammed
Zaman, both from the Greater
Manchester area, who recently
launched their online East at
Home food business. The East at
Home cookbook can be used with
East at Home ingredients as short
cuts, but it also explains how to
make everything from scratch.

Honey Plus is
the name of
a cucumber
variant from
Burpee Europe. It
has smooth pale-green to white
skin and crispy-crunchy, sweetas-honey,
golden-fleshed fruit. It
was originally available from just a
handful of UK seed companies, but
now you can get your mitts on these
little pale green treasures from a
whole host of seed companies. It is
highly productive with the plants
yielding glossy 155-225 g fruits in just
40 days. Great for fresh snacking,
children's packed lunch boxes,
sandwiches, salads, and pickling.
Burpee Europe do not sell direct to
the consumer, but their seeds are
sold via top UK seed companies.
Cucumber 'Honey Plus' seeds are
available now from various UK Seed
companies.
