Picnic Ham & Cheese Toastie
Shropshire-based Royal Warrant ham
producer Dukes Hill was featured
on ITV1's James Martin's Saturday
Morning series when host James
Martin demonstrated his twist on
a classic ham and cheese toastie
by using Dukes Hill's Wiltshire ham
paired with a bechamel sauce.
He hollowed out a sourdough
loaf and layered inside with Dukes
Hill's premium succulent ham, a rich
bechamel sauce and fresh tomatoes
before baking the loaf for 40 minutes.
The result is a melty, oozy picnic
loaf that can be eaten straight
away or served for guests for an al
fresco lunch. Martin's recipe can be
replicated at home with Dukes Hill's
Wiltshire Ham.
Ingredients, makes a loaf
• 1 sourdough loaf, hollowed out
• 12 slices of Dukes Hill thick cut
Wiltshire ham
• 4 tomatoes, sliced
For the sauce
• ½ onion
• 3 cloves
• 1 bay leaf
• 100g butter
• 50g plain flour
• 500ml full fat milk
• 400g cheddar cheese, grated
Method
1. Preheat the oven to 170c.
2. Warm the onion, cloves, bay
leaf and milk. Then, heat the
butter and add the flour. Follow
by adding the milk, whisking
constantly. Finish by adding the
cheese and season.
3. To assemble, layer up the bread
with cheese, tomatoes and
ham. Bake in the oven for 35-40
minutes, and either serve as soon
as it is not too hot to handle, or
pack and carry to your picnic.
