Mango and Relish Rice Stacks
It's a delicious and simple tuna "sushi" starter using tuna (or vegan: Squeaky Bean
new tuna) avocado, fresh vegetables. Serving: 2 Stacks, serves 2, prep time 10 mins.
Ingredients:
• Rice 400g
• Tinned Tuna (or vegan version: Squeaky Bean
Tinned Tuna)
• A smashed avocado
• Mayo/Vegan mayo
• Raw veg: 50g of white or hispi cabbage, spring
onion, green beans or similar.
• 1 mango, diced
• 30g Vadasz Hot & Sweet Jalapeno Relish
• Fresh coriander
• Splash of chilli oil
Instructions:
Prep and stack the following: leftover rice
(preferably sushi) packed/pressed into
in oiled ramekin or something similar to
create tower/stack onto plate. Loosely mix
tuna (in oil) with seasoned mayo. Shred
very finely raw veg, such as white or hispi
cabbage, spring onion, green beans. Mix
some fresh diced mango into some Vadasz
Hot & Sweet Jalapeño Relish. Garnish with
roughly chopped fresh coriander and some
chilli oil.
