Miso magic
Leading authentic Japanese and
organic fine foods brand Clearspring
has added a new product, with
a unique twist, to its authentic
Japanese miso range. Called Organic
Unpasteurised Japanese Chickpea
Miso is made from whole organic
chickpeas, mixed with rice and
koji culture (rice inoculated with
Aspergillus oryzae mould spores).
The resulting non-soya recipe miso
is truly innovative and one of the
only such misos available in the UK
and Europe.
The miso is 100% organic, GMOfree,
live, fermented, unpasteurised
and suitable for vegans. It is made
using the same traditional Japanese
methods as the brand's flagship
Organic Brown Rice Miso, by a
second-generation family producer
in Japan's Nagano prefecture. It
delivers a smooth, rich flavour which
balances the nutty-sweet flavour
of chickpeas with the umami-rich
flavour of traditional miso. It is also
incredibly versatile. It can be used
just like traditional Japanese miso to
make miso soup, stews, casseroles,
dressings or used as a seasoning
or glaze.

Cheesy grins
Kabuto has modernised the

Devon-based Sharpham Dairy
has been increasing its range of
products over the last couple
of years and has now developed
its own crackers working with
The Fresh Flour Company from
Buckfastleigh. They have been made
to complement its growing range of
artisan cheeses and chutneys. The
new crackers (RRP £3.50) Rosemary
& Sea Salt, and Original Sourdough,
will be launched along with two new
chutneys, one being British Bramley
apple and local Hunts Wobbler
Cider Chutney, the other being
Ploughman's Hunters Elmhirst Ale
Chutney.
The crackers are made with heritage
wheats, local honey, Devonion
sea salt and with soft water from
Dartmoor. All the packaging is
recyclable. Sharpham Cheese is
the UK's first cheese dairy to be
granted a B Corp certification*. Its
selection of cheeses is handcrafted
with South Devon milk from their
own herd of Jersey cows, along with
goats and ewe's milk from their West
Country neighbours.
